I got this off of Carole Frenche's Blog and have to try it. All she uses is chopped cabbage, zucchini, carrots, beets, sprouts, avocado, and cucumber. I'd probably switch out some stuff, like get rid of the beets altogether, and maybe add fresh green beans or asparagus or something yummy to give it more of a crunch.
Looks simple enough, and sticks to the "Only Veggie" rule for day 2 and 3!
